Description
This method, which may form the basis of molasses purchasing contracts, measures the content of total reducing sugars, as glucose, after hydrolysis of sucrose in molasses samples.
The reducing sugars in the sample are heated with a copper (II) solution which is partially reduced to copper (I) – the excess copper (II) being determined iodometrically.
The absolute difference (for molasses samples containing around 50 g/100 g reducing sugars) between two results obtained under repeatability conditions should not be greater than 1.64 g/100 g and under reproducibility conditions should not be greater than 2.59 g/100 g.
