Description

This method measures the polarimetric sucrose content in cane or beet molasses in the absence of interference from raffinose, kestoses and unknown substances which give rise to optically active substances on hydrolysis. It is usually used as a method to assess the value of molasses in terms of apparent sucrose to fulfil a commercial requirement and does not purport to measure true sucrose.

The polarimetric sucrose content of the sample is measured directly and after acid hydrolysis using a polarimeter or saccharimeter.
