Method Abstract

This method is used to determine the reducing sugars content in beet molasses.

It is suitable for beet molasses where the reducing sugars content normally lies below 5 g/100 g.

The procedure relies upon the capability of the reducing sugars present to reduce Fehling’s solution under standard conditions.
