Description

The method is used to determine the sulphite content for refined sugars by an enzymatic procedure. Where a choice exists for white sugar then method GS2-33 is preferred.

The enzymatic procedure results in the formation of hydrogen peroxide which is reduced by NADH peroxidase; the resultant absorption decrease is measured using a spectrophotometer.

The method has Official Status for refined sugars except for brown sugars for which it has Tentative Status.

The absolute difference between two results obtained under repeatability conditions for white sugars between 4.02 mg/kg and 23.84 mg/kg sulphite should be in the range of 1.17 mg/kg to 6.49 mg/kg and under reproducibility conditions in the range of 1.74 mg/kg to 14.58 mg/kg.
