Description
This method is used for the enumeration of osmotolerant yeasts and xerotolerant moulds in white sugar.
The method utilises two possible procedures; using either a pour plate technique (better for coloured sugars or those that cannot be dissolved in water) or filtration through a sterile membrane filter.
Samples are incubated at 25 °C for (5 to 7) days.
