Description
This method is applicable to white sugars and provides a measure of the ionised soluble salts in a solution of the sample sugar.
The “ash” value determined is known as conductivity ash and cannot be directly compared to ash determined by incineration and weighing. The samples’ conductivity is measured, and a factor is used to convert the value to conductivity ash.
For sugars of average ash content of 0.0123 g/100 g, the absolute difference between two results obtained under repeatability conditions should not be greater than 0.00115 g/100 g and under reproducibility conditions not greater than 0.00177 g/100 g.
