Description
Glucose and Fructose are determined photometrically by measurement of the light absorption caused by NADH formed in an enzymatic reaction.
The method is suitable to determine glucose and fructose in order to follow their destruction during the purification or the thermal or microbial decompositions during the process.
This method is applicable to beet molasses, beet and primarily to juices and syrups.
On a tentative basis, according to a limited test organised inside the French National Committee, it can be considered that:
For (250 to 790) mg/L glucose in juice or (50 to 350) mg/kg glucose in thick juice or molasses, the absolute difference between two results under repeatability conditions should be not greater than 22 mg/L or 10 mg/kg.
For (150 to 1000) mg/L fructose in juice or (150 to 300) mg/kg fructose in thick juice or molasses, the absolute difference between two results under repeatability conditions should be not greater than 15 mg/L or 5 mg/kg.
