In this work we used the method of physico-chemical analysis for the investigation of the chemical interaction between sucrose and potassium and natrium salts. It is shown that not all potassium salts are able to from double compounds with sucrose.
The influence of the salts on the solubility doesn’t always correspond to their property of the formation of double chemical compounds.
The comparison of the composition of normal molasses samples has shown, that not one single group of nonsugars influenced the increase of sugar losses in the molasses.
The losses of sugar in the molasses may be clearly calculated according to the general quantity of non-sugar, which has passed into a clarified juice on 100 kg of the beet and according to its potassium and natrium content.
