Density data for aqueous solutions of glucose, fructose and invert sugar

The density of aqueous glucose, fructose, and invert sugar solutions was measured as a function of mass fraction and temperature. After the respective mass fraction had been determined at the Institut für Technologie der Kohlenhydrate an der Technischen Universität Braunschweig with an uncertainty of 0.002%, the density was hydrostatically measured at the Physikalisch-Technische Bundesanstalt Braunschweig with a relative uncertainty of 1 · 10-5. Polynomials are given for the density as a function of concentration and temperature, and for practical applications, also for the density as a function of mass fraction and temperature and for mass fraction as a function of density and temperature. The results will be presented to the International Commission for Uniform Methods of Sugar Analysis (ICUMSA) at its 22nd meeting in Berlin from May 24 to 29, 1998.
