Non-thermal pressing and washing of fresh sugarbeet cossettes combined with a pulsed electrical field

The exposure of cellular tissue to a pulsed electrical field (PEF) results in permeabilization of the cell membranes. Such treatment, combined with a mechanical pressing, increases the efficiency of expression of cellular material. This paper outlines a non-thermal technique developed for extraction of raw juice from beet cossettes at low pressure values. After two pressing stages, separated by a PEF treatment, and cake washing, 98% of the soluble matter contained in the sugarbeets was extracted.
