Functional properties of glucose syrups

Glucose syrups and some of their derivatives are in addition to sucrose the main traditional sweeteners in a wide variety of foods and drinks. Although their function is to sweeten these products, they also impart other properties to them. The main functional properties of these conventional sweeteners are described.
